    Ever since I found this dish I have made it on almost every trip I have been on and do it at home for the family every few weeks. It's easy and so, so good. Adjust it to your tastes.

    Smoked Salmon Pasta (for 2 very hungry adults)

    2-4 cloves garlic
    2 shallots
    3 Tbs butter (or oil)
    4+ Tbs sun dried tomatoes
    Smoked Salmon or Tuna (in can or pouch, 5-8 oz)
    8-12 oz pasta, preferably corkscrew
    1/2-3/4 cup parmesan cheese (grated)
    1/2 cup water
    1-2 boullion cubes

    In a pot, heat butter or oil and gently sautee diced garlic and shallots for a few minutes. Then add tomatoes, boullion cube(s), water, and salmon or tuna. Stir, and once the liquid begins bubbling, take it off the heat and let it soak while you make the pasta.
    Make the pasta and drain it. Add the sauce, which should have combined well while the pasta was cooking. Then add the parmesan and mix well. Voila, a good mix of protien, carbs, and fat and a great meal.
    I found Trader Joe's smoked salmon is perfect for this, even though it comes in a small can. Last week I tried a 5 oz pouch of smoked tuna I got at Safeway which was also very good.
